Which one is that flat Shure Microphone?

It's usually used on stage for capturing ambiance. It looks like a triangle mounted on a stand. I can't find it anywhere!

I believe what you mean is the KSM44 Studio Microphone. This is one of the best to capture ambiance to pick up acoustic, drums etc...
Also, the KSM27 for live applications is also very Very Good.

The PZM is used mostly for Bass Drum to pickup the kick and punch while keeping a good sound.
